Cretan Citrus Vinaigrette

Orange Olive Oil Cake (Moist & Fragrant)

Ingredients
  • 4 eggs
  • 200 g sugar (1 cup)\
  • 180 ml olive oil (¾ cup)
  • 250 ml fresh orange juice (1 cup)
  • Zest of 1–2 oranges
  • 300 g all-purpose flour (about 2 cups)
  • 1 packet baking powder (10 g / ~2 tsp)
  • 1 tsp vanilla extract (optional)
  • A pinch of salt
Instructions
  1. Beat the eggs and sugar until light and fluffy.
  2. Slowly add the olive oil while mixing.
  3. Add the orange juice and zest.
  4. In a separate bowl, mix flour, baking powder, salt, and vanilla.
  5. Gradually fold the dry ingredients into the wet mixture (do not overmix)
  6. Pour into a greased cake pan.
  7. Bake at 170–180°C (340–355°F) for 45–50 minutes.

Rustic Bread with Fresh Tomato, Olive Oil & Oregano

Ingredients
  • 1 slice of rustic bread (country-style or sourdough)
  • 1 ripe tomato
  • 1–2 tbsp olive oil
  • A pinch of sea salt
  • Dried oregano (preferably Greek, e.g. Cretan)
Instructions
  1. Lightly toast the bread if you prefer it crispy.
  2. Grate the tomato or finely chop it.
  3. Spread the tomato evenly over the bread.
  4. Drizzle with olive oil.
  5. Sprinkle with sea salt and oregano.
